Mafulufute (Black Flying
Ants) |
These occur mainly in the early rainy season and can
be distinguished from the common sausage fly by their almost spherical
abdomens.
Method: Fry the flying ants with a little salt, no fat. Serve hot or cold as
a relish.

Goat Meat Balls (Goat Meat
Balls) |

1 ½ pound
minced goat
1 ½ cups soft bread crumbs
2 teaspoons salt
1 onion, finely chopped
1 ½ cups goat stock
2 tablespoons Worcester sauce
2 eggs lightly beaten
Oil for frying
½ cup sour cream (optional)
Mix together the minced goat, bread crumbs, salt, onion, Worcester sauce and
eggs. Shape into small balls. Brown these in the hot oil until brown all
over. Add the stock and simmer gently 20-25 minutes until done. Add the sour
cream just before serving and mix in lightly.

Masamba (Greens with Ground Peanut Sauce) |

Masamba
serves 4-6.
1 lb greens of choice (Kale, Spinach, Collards or Pumpkin leaves) washed and
chopped
½ teaspoon salt
4 medium tomatoes chopped
4 tablespoons peanut powder
2 small onions (optional)
Prepare the peanut powder by grinding or blending roasted peanuts. Put
greens in just enough boiling salted water to cook down. Cook over medium
heat until soft, adding more water as needed to keep from sticking. After 1
minute, put the tomatoes, onions and peanut powder on top of greens but
don’t stir. Reduce heat and simmer for 15 minutes. Stir and simmer an
additional 15 minutes.
