Masamba (Greens with Ground Peanut Sauce)

Masamba serves 4-6.

1 lb greens of choice (Kale, Spinach, Collards or Pumpkin leaves) washed and chopped
½ teaspoon salt
4 medium tomatoes chopped
4 tablespoons peanut powder
2 small onions (optional)

Prepare the peanut powder by grinding or blending roasted peanuts. Put greens in just enough boiling salted water to cook down. Cook over medium heat until soft, adding more water as needed to keep from sticking. After 1 minute, put the tomatoes, onions and peanut powder on top of greens but don’t stir. Reduce heat and simmer for 15 minutes. Stir and simmer an additional 15 minutes.
