Ugandan Groundnut ​Stew

Serves 4-6


INGREDIENTS:
450 
g stewing beef
6 
tablespoons smooth peanut butter
2 
medium onions (chopped)
450 
g ripe tomatoes (chopped) or 400 g tomatoes (chopped)
3 
fresh chili peppers
450 
g carrots (or a mixture of carrots, turnips and zucchini)
1 
pinch mixed herbs
2½
cm piece fresh ginger, grated or 1 teaspoon dry ginger powder
Salt and black pepper


INSTRUCTIONS:
1. Remove seed from chilies and chop them finely.
2. Mix them with the peanut butter, ginger, herbs, vegetables and tomatoes.
3. Place meat in a saucepan with a tight fitting lid and add the vegetable mixture and some seasoning.
4. Put on the lid and cook very gently for about one and a half hours or until the meat is tender.
5. Don't worry about the lack of liquid because the meat and vegetables will make enough.

Ugandan Curried ​Potatoes

Serves 4


INGREDIENTS:
1 kg potato, peeled and parboiled and diced into ½ inch pieces
1 medium onion, peeled and finely chopped
2 garlic cloves, minced
½ teaspoon ground turmeric
½ teaspoon piri piri chili sauce
½ teaspoon ground cinnamon
½ teaspoon ground coriander
1 teaspoon tomato puree
1 Tablespoon fresh parsley, chopped
Salt
2 Tablespoons cooking oil


INSTRUCTIONS:
1. Heat the oil and sauté the onions. When they begin to turn golden, add the garlic and cook for 30 seconds.
2. Add all of the ground spices gradually and stir fry for about 1 minute.
3. Now add the tomato puree, lemon juice, parsley and salt to taste.
4. Add the parboiled, diced potatoes to the rest of the ingredients. Stir well to distribute the sauce and add 3/4 cup of water.
5. Cook uncovered for about 10 minutes or until the potatoes are tender and the sauce has reduced. (You should add a little extra water if the potatoes look a little dry whilst cooking).

​Sim-Sim: Sesame Cookies

INGREDIENTS:
Use equal parts of
Sesame seeds (clean & dry)
Sugar


INSTRUCTIONS:
1. Heat together over a low temperature until the sugar liquefies. Be careful not to let the mixture cook too long, or the cookies will be too brittle.
2. Pour the hot mixture onto a flat, greased surface. And let it cool down.
3. Cool until warm to the touch, but not hot. Slice into squares. Separate the square cookies and remove them to another surface to remain cooling.
