Portuguese Shrimp Mozambique
Serves 4
INGREDIENTS:
31-40 count bag of Medium or Large Shrimp
3 cloves garlic, minced
1 1/2 sticks unsalted butter. (3/4 cup)
4 packs Sazon Goya Spice
8 oz white wine or beer
Fresh parsley (optional)
1/2 Tablespoon fresh squeezed lemon juice
2 Tablespoons hot pepper sauce
1 1/2 cups rice or French fries for serving
INSTRUCTIONS:
1. Pat-dry your shrimp to remove excess moisture. If frozen, thaw before starting.
2. In a large stock pan melt butter over medium-low heat.
3. Once the butter is melted add the garlic and sauté until fragrant and lightly golden brown.
4. Place the shrimp in the pan with the garlic, and then add the 8 oz of beer or wine, the Goya seasoning, lemon juice, pepper sauce and parsley. Lower heat to low, and simmer for 15 minutes. Shrimp will be translucent and curl up a bit.
5. This shrimp tastes better the longer it marinades, but you do not want to overcook it. To reheat, simply microwave, or simmer until it starts to boil.
To shell or not to shell shrimp before cooking? Leaving shells on helps to flavor the shrimp, but this can made with shells removed before cooking, for ease of eating.
