Mnkhwani: Pumpkin leaf stew
INGREDIENTS:
3 cups pumpkin leaves, de-veined and chopped (can substitute spinach or other hardy greens)
½ cup water
1 tsp salt
3 medium tomatoes, chopped
½ cup groundnut flour (peanut flour)
1 onion, chopped
1 T oil
INSTRUCTIONS:
1. Fry onion in oil.
2. Bring water and salt to a boil in a saucepan.
3. Add chopped leaves and simmer for 5 minutes.
4. Add tomatoes and groundnut flour, mix well, and simmer for 5 minutes longer.
5. Serve with nsima or rice.
