Mtori (Cream of Banana Soup)
Serves 4-6
INGREDIENTS:
1 pound (500 g) beef, diced
2 large soup bones
6 cups cold water
1 Tablespoon vegetable oil
5 green unripe bananas or plantains
1 yellow onion minced
1 large ripe tomato, blanched, peeled and minced
Salt
Freshly ground black pepper
1 teaspoon butter
INSTRUCTIONS:
1. Put the meat, bones, and water in a large pan and bring to a boil. Simmer for 1 ½ hours to make a concentrated stock.
2. Rub the oil on your hands to prevent staining from the raw banana sap when you peel them. Peel and cut the bananas into thin strips. Strain the stock and remove the meat and bones. Discard the bones and save the meat.
3. In a large pan, combine the stock with the banana strips, onion, and tomato, and season with salt and pepper. Simmer on medium heat until all the ingredients are cooked and very soft.
4. Remove from the heat and whisk or blend together into a creamy soup. Add the reserved cooked meat. Taste and adjust the seasoning. Add the butter, stir through, and return to the heat.
5. Reheat and serve hot.
