Crepes de Bananes (Banana Fritters)

Makes 12 Fritters

INGREDIENTS:
2 medium size ripe bananas, peeled
1 large egg
¼ cup all purpose flour
2 Tablespoons firmly packed light-brown sugar
¼ teaspoon ground cinnamon
Vegetable oil for frying
Confectioners’ sugar

INSTRUCTIONS:
1. In medium-size bowl, mash bananas; stir in egg, flour, brown sugar, and cinnamon until THE mixture is well blended.
2. In 10-inch skillet or deep-fryer, over medium heat, heat 1 inch vegetable oil to 400 degrees on a deep-fat thermometer. Or, heat oil in electric skillet set at 400 degrees.
3. Carefully drop banana batter, one tablespoon at a time, into hot oil. Add 3 more separate tablespoonfuls of batter, so there is a batch of 4 fritters. Cook fritters about 3 minutes until golden.
4. Using a slotted spoon, place fritters onto paper towels to drain. Repeat twice more with remaining batter. Sprinkle fritters with confectioners’ sugar.

These can also be enjoyed topped with vanilla ice cream.
