Niger 2022 Recipes

Spice Crusted Sweet Potato Wedges

Serves 4-6

INGREDIENTS:
3 pounds sweet potatoes or yams, unpeeled, sliced into wedges
3 Tablespoons oil
1 Tablespoon sesame seeds, toasted
1 Tablespoon nigella seeds (or poppy seeds)
1 Tablespoon dried garlic flakes
1 Tablespoon dried onion flakes
2 teaspoons kosher salt
1 teaspoon ground ginger
1 teaspoon curry powder

INSTRUCTIONS:
1. Preheat the oven to 425 degrees.
2. Cut the sweet potatoes into wedges, about 6 to 8 per potato, depending on the size and shape of your potato. Put them into a large bowl and drizzle them with the oil.
3. Mix all the rest of the seeds and spices together in a small bowl. Toss this mixture over the potatoes and mix all together.
4. Spread on a baking sheet and bake for 20 to 25 minutes, turning once during the baking time.
