Peru 2020 - Recipes

Lima Bean Casserole

Serves 4

INGREDIENTS:
1¼ cups / 225 grams Lima or butter beans, cooked
1 onion, chopped
2 cloves garlic, crushed
½ teaspoon chili powder
4 tomatoes, chopped
rind and juice of ½ to 1 lemon
2–3 tablespoons fresh parsley, chopped
oil
salt and pepper

INSTRUCTIONS (for fresh pears):
1. Take a bowl and place the cooked beans in it; partially mash them with a potato masher or fork.
2. Heat the oil and gently fry the onion for a minute or two. Then add the garlic and the chili powder and cook for a few moments more.
3. The mashed beans can be spooned in at this point; mix them in well. Add the tomatoes, lemon rind and juice, parsley and seasoning. Cook covered for 5–10 minutes to let the flavors fuse and then serve with pita bread, tortilla chips or rice.
