Vegetable Pad Thai (Thai Noodles)
Serves 4
INGREDIENTS:
8 oz. dry rice noodles
1 Tablespoon soy sauce
2 Tablespoons sesame oil
1 Tablespoon rice vinegar
1 teaspoon honey
1 clove garlic, minced
oil for frying
1 egg
¾ cup bean sprouts
1 scallion, chopped
2 Tablespoons chopped peanuts (optional)
INSTRUCTIONS:
1. Soak rice noodles in warm water until slightly soft. Drain well.
2. Stir together soy sauce, sesame oil, rice vinegar, and honey, and set sauce aside.
3. Sauté garlic in a pan with a little vegetable oil. Crack egg into the pan, and stir gently. Add bean sprouts and scallions and stir.
4. Add noodles and sauce and gently stir everything together.
5. Sprinkle with chopped peanuts, if using. Serve and enjoy!
